Chocolate and banana cookies

Chocolate and banana cookies

Here is another great simple cooking activity to do with the children. There’s a lot of mashing and stirring, so no need to use a food processor or mixer. Try mixing the fruit content up a bit by substituting the banana for dried apricots, raisins or cranberries!

  • 310g plain flour
  • 2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 150g caster sugar
  • 150g butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 225g mashed extra-ripe bananas
  • 150g dark chocolate chips

1. Preheat oven to 200 C / Gas 6.

2. Grease a couple of baking trays.

3. Sieve the flour, baking powder, and bicarbonate of soda together; then put to one side.

4. Cream butter with sugar until light and fluffy. Beat in eggs and vanilla.

5. Mix in bananas (or whichever fruit you have selected to use!) and fold in the flour mixture.

6. Stir until just combined, then fold in chocolate chips.

7. Drop small balls of the mixture onto prepared baking tray. Bake in preheated oven for 12 to 15 minutes.

8. Once cooled a little, dig in!
